Bakery Flour
Bookings of bakery flour expanded
during the first half of last week as wheat
futures continued to descend from recent
highs. Contracting was limited thereafter
as futures bounced higher on spillover support
from corn futures. Prices were mixed:
higher for spring grades, lower for panbread
and soft flours.
After spring grades had been the sales
leader for most of May, pan-bread flour
took that mantle last week, millers said. Soft
wheat flour activity was mostly quiet.
Retailers resumed normal buying for
bagged flour, one miller said. Millers sensed
buyers who were short supply were keen
to finish coverage for the current quarter
before the holiday weekend and the end of
the month.
Most major national bread bakers were
well covered, millers said. Customers
extending coverage last week included
medium and smaller bakeries and food
manufacturers.
Additional demand for soft flour from
cookie-cracker and specialty bakers was
light with the exception of orders from those
supplying quick-service restaurants.
Coverage in the current quarter was
essentially completed for all grades. For JulySeptember,
spring-grade and pan-bread flour
coverage jumped to 80% with soft flour coverage
at 65%. In the fourth quarter, coverage
was steady at 50% for spring grades, 35% for
pan-bread flour, and 20% for soft flour. MBN

Family Flour
Sales and shipments of national and
regional brands of family flour were sluggish
last week.
Many consumers who had filled their
pantries during the coronavirus pandemic
year had plenty of flour on hand for baking,
so demand was even lower than usual for
late spring, a flour manufacturer said.
No significant pickup in orders was
expected until late summer in advance of
the 2021-22 school year when some US school
districts were expected to return to in-person
learning for the first time in more than a year,
leading to increased packing of flour in larger
25-lb and 50-lb bags for school cafeterias.
In the market for private label, most buyers,
including mass merchandisers and grocery
chains, were well covered through the
crop year, and some had locked in what they
needed through September.
Branded flour in a 5-lb package was $2.99
at one Midwest grocery chain where private
label in the same size was $2.39. Branded
flour in 5-lb bags could be found as low as
$2.40 at a mass merchandiser where private
label was listed at $1.22. MBN
Semolina
Bookings of semolina, granulars and
durum flour were limited last week. Prices
were lower.
Durum mill grind continued to decline,
reaching an average of four days last week.
Some pasta manufacturers were clocking
shorter runtimes as well, extending downtime
up to five days around Memorial Day in
some cases. Most were running short goods
in greater frequency than long pasta products
such as spaghetti noodles, a miller said.
Pasta manufacturers appeared to have
large inventories stockpiled for most products
after sales returned to relative normalcy
after some panic buying and hoarding
last year. Since then, pasta sales appear to

have declined somewhat, both seasonally
and because consumers' pantries still were
well-stocked after the pandemic year.
" Finally, there is progress on reducing the
COVID problem, " a miller said. " There was
obviously hoarding going on for all sorts of
products. People are fully realizing there's
certainly not going to be a shortage of pasta.
There never really was one. "
Choice milling hard amber durum was
unquoted at the Chicago rail gateway and
in Minneapolis. However, cash durum had
begun to trade in limited volume after an
extended period with no trades. Trading was
expected to pick up after the holiday, and
market definition was expected in early June.
" It's extremely limited trading, still illdefined,
but there's more selling interest than
there has been for the past month and a half, "
a durum miller said. " They won't say at what
level, but they say they're willing to sell it. "
Durum country, in desperate need of moisture,
received 1 to 2 inches of rain at the beginning
of last week. That " kicked the can down
the road a ways, " a miller said, giving the crop
good germination. But more rain was needed
before the end of June in western North Dakota
to bring the crop into harvest. MBN
