Bakery Flour
Bookings of bakery flour were brisk in the
last weeks of September. Prices moved higher.
Millers said bakers came in for significant
coverage extensions leading up to and
after the release of the US Department
of Agriculture's quarterly Grain Stocks
report, which estimated stocks of wheat
held in all positions in the United States on
Sept. 1 at 1,779,938,000 bus, down 18% from
2,157,825,000 bus a year earlier.
Futures coverage was prominent, especially
for bakers and other flour buyers still
short on fourth-quarter coverage as the
period began. Some paid up for the coverage
when a hoped-for break in wheat futures
didn't materialize.
One miller said the equivalent of two
days' grind was sold under flat pricing with
total commitments rising to seven days'
worth of grind when new futures coverage
was considered.
" Buyers are hedging into 2022, " the miller
noted. " January-March coverage was next
to nothing, but April-May picked up some
bookings because those budgets still are
flexible as they finalize plans for 2022. "
Consumer packaged goods manufacturers,
including those making frozen dough,
thaw-and-serve meals, circular sandwich
breads and pretzels, were active. Quick-service
restaurant-facing bakers of buns also
were adding second-quarter coverage.
" Buyers are mostly operating with two
strategies, " a miller said. One, to stay short,

as it can't get much worse, he said. Or two,
start to layer in coverage in the hope prices
decline.
Flour coverage at the onset of the current
quarter was estimated at a steady 75% for
spring grades, and pan-bread flour coverage
jumped to that level as well. Soft flour
coverage continued to lag at 60% for OctoberDecember.
For
the first quarter of 2022, coverage
levels were essentially plateaued at 40% for
spring grades and pan-bread flour with soft
flour at 30%.
A significant portion of the week's contracting
covered the second quarter of 2022.
Pan-bread bakers and spring grade users
led the pack pushing coverage up to 25%.
Cookie-cracker and specialty buyers have
locked in an estimated 15% of their expected
needs for April-June 2022. MBN
Family Flour
Sales and shipments of national and
regional brands of family flour increased
last week. Seasonal trends exerted themselves
with the school year now started
nationwide and home bakers beginning to
assess their needs for the fall baking season.
Carlot list prices were unchanged.
It was too early to compare seasonal sales
and shipments with pre-COVID historical
levels. But millers mostly felt September
sales were on par with September 2019.
Promotions at the retail level popped
up in select markets. More were expected
in October. Some outlets with inventories
built before a summer price increase could
initiate deals as low as $4 for two 5-lb bags of
branded flour. One miller asserted two bags
for $5 would be more common for inventory
purchased after the price increase.
Private label coverage was completed
through December. Some buyers had locked
in a healthy portion of their expected firstquarter
needs, while others were focused

Semolina
Bookings of semolina, granulars and
durum flour were light last week. Prices
were unchanged.
The price of choice milling hard amber
durum as quoted at the Chicago rail gateway
for delivery beyond was $18 a bu, unchanged
from the previous week. The Minneapolis
price was $17.80 per bu.
Durum wheat was readily available. Buyer
interest was evident where it was absent a
week earlier. Durum mills posted semolina
offers to pasta manufacturers, who continued
to calculate increased supply costs stemming
from the smaller durum wheat crop as they
crafted their budgets for 2022.
Fourth-quarter semolina coverage was
essentially completed with the remaining
business to be transacted with week-to-week
buyers. First-quarter coverage was estimated
at 10% to 15%.
Customer offtake was steady, which kept
durum mills grinding about five days. That
mill grind was shorter than usual for late
