number of stock-keeping units offered in order to maximize total volume
produced and minimize the chances consumers would encounter empty
shelves at supermarkets.
Similarly, Daniel Servitje, CEO of Grupo Bimbo SAB de CV, said
consumer stockpiling in late March tested the company's capacity to keep
up with demand.
"Many of our plants and distribution routes are operating at full capacity, given the great demand for bread, buns, sweet baked goods,
cookies and tortillas," he said.
At Kellogg Co., Battle Creek, Mich., the company's cracker sales
jumped almost 40% in March versus a year earlier, and salty snacks and
wholesome snacks enjoyed jumps of nearly 30%. Ready-to-eat cereal
sales jumped 43%, and sales of waffles surged 7%.
The pasta business also has seen dramatic shifts in recent months.
Ebro Foods SA, Madrid, Spain, is one of the largest producers of pasta
in the United States and has enjoyed considerable growth in recent
months. In the company's mid-year financial results, the company said
EBITDA from its US pasta division in the first half of the year equaled
the company's EBITDA total in 2019. Overall, the company enjoyed
50% sales growth across its brands, an expansion in business only
possible because Ebro withdrew from a number of private label accounts in 2019.
Even more remarkable was a spike in sales for family flour. In August,
a category that has been declining for more than 100 years experienced
a surge of sales as suppliers were unable to meet fully. In response, Ardent Mills, the nation's largest flour milling company, created a dedicated
retail team and expanded its capacity in the Northeast by adding a retail
packer to existing operations in Mount Pocono, Pa., that produces small
pack options such as 2-lb, 5-lb and 10-lb bags. Another line was added to
a Newton, Kan., facility. Other family flour packer installations are planned
by the company in the year ahead.
As was the case across the packaged foods industry, many grain-based

foods companies experienced surges in household penetration that was
attributed to pantry loading during the COVID-19 pandemic and stay-athome orders. Consumers returned to brands they had not tried in years,
or ever. Finding a way to parlay at least some of the large increase in
sampling into sustained demand was an oft-cited objective of industry
executives. Also an increased priority amid the pandemic has been ways
to capitalize on large increases in food purchased through e-commerce.
While overall e-commerce food sales remain fairly modest, the dramatic
increase in recent months affirmed the need at many companies to participate more fully in this arena.
At the same time, baking companies with business focused principally
in the foodservice sector experienced severe business downturn in March,
and conditions eased only slightly as the year progressed. In some cases,
bakers sought ways to quickly pivot from a foodservice/institutional focus
toward the retail segment.
Two companies enduring upheaval over the past year have been
Aryzta AG and J&J Snack Foods Corp.
Even before the COVID pandemic struck, Aryzta had been struggling and
was in the midst of an organizational restructuring. In January the company named Tyson Yu CEO of Aryzta North America. The company in March
halted production at its Austin, Texas, plant, reflecting poor demand from the
foodservice sector. In May, the company announced a range of cost-cutting
measures as well as the engagement of Rothschild & Co. to conduct a review of "all strategic and financial options available to the Group to maximize value for the benefit of all of the Group's stakeholders." Cost-cutting
