Chambersburg, Pa., up 4.1%. Excluded from the fresh bread category, King's
Hawaiian Holding Co., Inc., Torrance, Calif., saw unit sales jump 5.4% (included
in the all other fresh rolls/bun/croissants category of IRI).
Baking companies of all sizes have grappled with tight labor markets, as
has been experienced throughout the consumer packaged foods business. For
example, Zingerman's Bakehouse, an independent baker based in Ann Arbor,
Mich., has been forced to dial back its growth plans because of an inability to
fill open positions. Amy Emberling, managing partner of the baking business,
said the company was able to operate successfully during the first year of the
pandemic with a lean staff and a smaller number of stock-keeping units. As
business has begun to heat up, though, the difficulty the company has experienced
attracting and retaining workers has impeded growth.
" What we're faced with now is not being able to hire enough people, " she
said in mid-August. Across all Zingerman's businesses, she estimated the company
at the time was understaffed by about 15%.
" The bakery by mid-October needs another 35 or 40 on top of that, " she
said. " Plus, seasonal people for the mail order business - we will want to
hire 300 or 400 people. The demand will be there. We will see whether we
can meet it. "
As a result of the hiring challenge, Ms. Emberling said the baking business
had placed a freeze, at least until January, on taking on new wholesale
customers.
Merger and acquisition activity has picked up among companies in the
bread and roll marketplace.
In March, a buyer was found for the North America business of Aryzta AG,
Schlieren, Switzerland. The parent company had been under pressure from
shareholders for several years because of its poor financial performance. Amidst
the pressure, the company in December 2020 decided to sell its North American
and Latin American businesses.
Three months later it was announced that private equity firm Lindsay Goldberg
would purchase the North American business for $850 million.

following years in which its parent company was struggling financially.
