A.M.I. preview

New technologies hold promise in feeding the world. Bioengineered grains can reduce pesticide use, increase yield and rehabilitate croplands. Yet the word "biotech" can evoke fear, suspicion and
opposition. Avery will address what the future holds for biotechnology. Other sessions during the Innovation Showcase will focus on animal diseases like B.S.E., A.I. and foot-and-mouth disease; regulatory
developments in the area of animal handling and welfare; an overview of nutrition and diet strategies; and understanding consumer
confidence and behavior.
On Sept. 29, A.M.I. will host a facility sanitary design workshop.
Plant layout and design are key factors in ensuring the safety of meat
and poultry products. The seminar will help attendees design, renovate and remodel facilities for enhanced sanitation and food safety.
During the seminar the 11 principles of sanitary facility design will
be discussed. Processors and architectural/engineering firms in the
U.S. developed the principles and their underlying criteria. Meeting
moderators will prompt discussion about how to put the principles to
work for a company.
The session is designed specifically for corporate and plant personnel involved in remodeling, renovation and new construction as
well as architecture and engineering professionals interested in understanding the principles and criteria for sanitary design of meat
and poultry facilities.
Held as a part of the Innovation Showcase will be the Meat Industry Research Conference. Industry scientists and food safety professionals will gather to learn about the latest food-safety issues and
research, updates on key regulatory initiatives affecting meat and
poultry industry operations, and examine perspectives on various
animal identification and traceability technologies. Sessions at this
year's MIRC include:
* A research update on critical foodborne pathogens, such as Listeria monocytogenes and E. coli O157:H7 will be provided.
* Dr. Dennis Olsen, an authority on food irradiation, will lend his
perspective on the future of meat irradiation as a food safety tool.
* A topic that has emerged as one of the most important for livestock producers and meat processors is animal identification
and traceability. Speakers will discuss the value of traceability
from a consumer and international perspective.
* Meat product quality and consistency remain the focal point of
successful product development efforts. This session's speakers will address how some companies are using sensory analysis techniques to enhance the process.
* The use of non-meat ingredients is critical to ongoing product
development efforts to enhance product quality and optimize
cost. The latest on the functional properties of ingredients will
be explored in this session.
* Attendees will also receive an overview of the numerous new
labeling initiatives on the horizon for the industry. With the requirement for mandatory nutritional labeling of single-ingredient
fresh meat, new regulatory initiatives related to qualified health
claims, and trans fatty acid labeling all looming, this session
should prove useful.
