Q: Why is it so important to hold my
lots after testing finished product?
A: The importance of holding lots
of products pending pathogen test
results can not be overemphasized. A
history of negative product samples
does not provide assurance for the
results of the current lot, and with
consumer food safety being the top
priority, holding sampled lots is a responsible business decision. Recalls
can be a hardship for any business,
and each time you ship product without waiting for test results, you are
putting your business at risk.
Putting your business in a recall
situation affects the entire industry.
Whether any foodborne illness is associated with a recall or not, recalls
are bad for consumer confidence in
all meat products. The Food Market-

hold lots of tested products until negative test results are received. While this
can be a challenge for certain types
of businesses, processors should work
with their local inspectors to ensure
that enough notice is given before a
sample is taken so that the production
lot can be held.
