leaner middle and back-end cuts.

it," Taylor says.
R-Ranch plans to open three more
stores in Southern California during the
next 18 months because the Hispanic
segment keeps growing larger in the region. But it's not just in the Southwest
where the Hispanic population is booming. It's also swelling in Midwestern cities like Chicago and Cleveland.
Which meat and poultry products
Hispanics want has plenty to do with
how long they've been in America,
Greer points out. The longer they've
been here, the more Americanized their
diets have become. Hence, a Hispanic who has been in the country for 40
years might opt for a chicken breast over

Hispanic immigrant would prefer.

panics? Greer says it's simply a matter
of companies working closer with retailers and improving communication
about consumer wants and needs.
"Be mindful that there may be
some very specific preferences, particularly in the meat and poultry ar-

eas, but they will vary from retailer
to retailer," Greer says.
Greer states what everybody probably already knows: That it's tremendously competitive for food marketers in the retail industry. The growing
number of Hispanics just adds another
layer of complexity to that competition,
he notes. But if retailers can work with
meat and poultry companies to figure
out the types of products that Hispanics desire, the potential is huge.
Then they can out-compete other
retailers who aren't following their
customers as closely," Greer says. "But
you have to do your homework and
know your customers with a great deal
of precision."
