Both lines were launched in May
2007 in a limited test market. Primary
markets include the state of Florida;
Atlanta; Chicago; Detroit; Columbus,
Ohio; St. Louis and the West Coast.
Participating retail customers include
Publix, Albertsons, Safeway, Kroger
and Wal-Mart.
The Chili's line includes Chili's
Baby Back Ribs, a 30-oz. package
of fully cooked ribs in Chili's signature sauce; two fajita kits (steak and
chicken), which includes fajita meat,
soft tortilla shells; vegetables (onions,
green and red peppers) and shredded cheese; and Monterey Chicken, a
chicken breast with barbecue sauce,
bacon and cheese with a side of garlic mashed potatoes.
The Romano's Macaroni Grill line
includes lasagna, which is the only
fresh, refrigerated lasagna available in
the refrigerated meat case today; Pasta
Milano, which is Macaroni Grill's signature pasta item - a bow-tie pasta
blend with chicken breast strips and
garlic herb sauce; Chicken Parmagiana, which includes a capellini pasta, chicken breast strips, mozzarella
cheese and marinara sauce; and spaghetti and meat balls.
"We are evaluating the results of
this test and we are hopeful we will
have some level of expansion as we
go into 2008," McDowell says.
The Morton plant also processes
private-label entrées. "We are the largest private-label processor of refrigerated, fully cooked entrées at retail,"
Rocke says. "We produce all of the
major private-label refrigerated heatand-eat entrée programs in the United
States. We produce some products for
club stores and foodservice as well."

Focus on the plant
At the time RMH Foods was acquired
by Smithfield, other Smithfield-owned

Ill. plant.
Employing 135 people, this facility processes beef, pork and poultry
proteins and runs two shifts five to six
days per week. This facility features
stainless steel walls and ceilings, five
standard microprocessor-controlled
steam-box ovens and is designed to
keep raw and cooked processing operations segregated. The plant runs
four lines on its raw, processed side
and two lines on the processed, finalpack side.
When this facility opened for business, predictions were made that its
fi nished product capacity per week
would reach 1 million or more pounds

within a few years, although Rocke declines addressing questions regarding
the plant's capacity.
AEW Delford Systems, a major
equipment and technology supplier for
this plant and a member of the Marel
Systems Group, describes much of the
plant's operation on its Web site. The
raw and processed sides feature separate locker rooms, entrances, lunch and
rest rooms with no personnel access
to the fully cooked production area
other than through a dressing room
where a full wash down is required.
The heat-and-eat processing room also
has its own positive airflow system.
Plant visitors are allowed to view the
processing rooms only from secondfloor viewing windows.
During entrée production shifts, fresh
primals are prepared on a trimming line
before being continuously conveyed
through a portion-control slicer. The
sliced, weight-controlled portions are
then tumbled in a dry marinade prior to
grading and checkweighed before being
fed into the weight-control system.
Although both production lines are
fed from a single source, each have their
own weight-control system to ensure
overpacking is minimized and the final
weight of the finished package containing meat, gravy or sauce is exactly as
stated on the label. All meat portions
are then checkweighed to ensure they
fall within the set weight limits. They
are then tracked by the checkweigher. After being manually loaded into
