Ragin' Cajuns
Bayou processor has developed a tourist
attraction-like following

loyd Poché understates his accomplishments, but his modesty can't hide his success and
business savvy for long. Poché is the
proprietor of a Breaux Bridge, La.based meat operation that dates back
to 1962. His manner is easy, but the
way he has built and refined Poche's
Smokehouse is mind-boggling.
His customers are so sold on his
product and his hospitality that they
often write letters that are indicative
of the company's following. A recent
one reads: "I must say that no one
can touch Poché's bottom line. I have
been eating y'all's Boudin for about
15 years. I moved to Florida about
12 years ago and my dad still takes
a drive there just to get me Boudin
by the chest loads, since it's cheaper
to do it that way. I wish it was just
a little cheaper online though. I am
a loyal customer and will be until I
take my last breath."
That's just one of the thousands of
unsolicited testimonials offered about
Floyd and Poché's Smokehouse and

market, RV park, fishing pond and
crawfish paradise. They come from
Alaska, Hawaii, the Midwest and from
fellow processors who have visited
his operation from far and wide. The
universal complaint is that they can't
get back there often enough.

customers, Poché's ships its products nationwide, and his "good stuff" goes out
in 10-pound, minimum orders, totaling
tons of food shipments each week.

Storied past
So what's the story behind this Southern Louisiana marketing legend? It all
began before the Civil War when Antoine and Adela Poché settled along
The Bayou Teche near Breaux Bridge
and began farming. He opened a
meat market and butchered under a
large pecan tree. He cooked in big,
black iron kettles to make cracklins,
boudin, sausage and a specialty -
hog's-head cheese.
After a fire totaled the business,
it left Antoine in poor health. He
left the estate to his grandson, Lug
Poché. The meat operation was little more than a one-room store. By
1962, the market was expanded and
a restaurant added. Things went
well until Lug's retirement in 1976,
when he turned the business over to
his son, Floyd, who as a young boy
liked to watch the bouchré process
from a shade tree. Expansion developed around the idea of providing
customers with some of the interactive fun they were having. Today,
Floyd and his wife, Karen, have
