A little bit of
sunshine
During a recent tour of Agri Beef Co.'s
Washington Beef plant in Yakima,
Wash., it was hard for us to not notice
the windows along the long exterior
wall of the fabrication floor, which
spills plenty of natural lighting into the
plant. Not surprisingly, plant operators
say the line positions situated closest
to the windows are the most popular
among its 800-plus line workers. Who would have thought that a building design that reduces the need for electricity could also bolster worker morale? ■

Beef tongue ties
A Seattle Times writer recently wrote that beef tongue has made quite a comeback, "popping up at catered events, on bar menus and featured as the 'Special of the Day'" in area restaurants. Chef Thierry Rautureau, of Rover's and
Luc, featured a braised and
grilled beef tongue and caramelized onion crostini at
a Foodportunity networking event in August. And a
pickled beef-tongue sandwich at June restaurant in Madrona was $5 during
happy hour. Be prepared to see more culinary creativity using less-expensive,
rarely used cuts of meat (such as pig tails and lamb neck) as the public appetite for it grows...or at least as public appreciation grows of letting no part of
the animal go to waste, the writer acknowledged. ■

Wind-blown
opportunities
Never let it be said that the industry's small processors are not big on
innovation. Dave Hasselbach, owner
of Fremont, Ohio-based Hasselbach
Meats, for example, installed a wind
turbine this past spring to generate
electricity for his plant and, after several
months of operating,
even during the least
windy part of the
year, he says the benefits look promising.
The 100-kilowatt
tower is designed to
supply 75 percent of
Hasselbach's electricity needs each
year, thanks to the
three 1,000-lb., 39ft. blades perched
on a 120-foot tower.
After government
grants and tax credits, he says the investment will pay
for itself in about
six-and-a-half years.
Meanwhile, the tower itself is serving as
an attention-getting marketing vehicle.
After realizing how many people came
out of the woodwork to photograph
the turbine, "I put 'HASSELBACH
MEATS.COM in 4-ft. block letters
down the side," Hasselbach says. ■
