Hard to clean
Maintaining an effective sanitation crew is crucial to food-safety success

ecently, I was asked to make a presentation at a sanitary-design

sible task. Upon reflection, I came to realize that this question offered the perfect opportunity to describe and to explain some of the challenges associated with cleaning, in general. Before offering examples, keep in mind the ultimate obstacle to effective and efficient cleaning is poor design.

● Utilities incapable of providing hot water, drainage capability, lighting, compressed air, etc. ● Not having the correct tools to do the job right. ● New people who have not cleaned an area or equipment before (it takes practice to be perfect). ● A lack of good Sanitation Standard Operating Procedures (SSOPs). These are real challenges and if I came to work every day with the glass half empty as it appears with the negatives above, I would not be in sanitation. While there are challenges in sanitation as in any function, I do believe in excellence in sanitation, and here is how it is best described: ● Facilities and equipment designed for efficient and effective cleaning. ● Being technical professionals and business partners.

Having personally worked with legacy equipment and facilities, I know from experience that some equipment and facilities are not only hard to clean, but some may describe it as an imposOther common challenges that make it hard to clean include: ● Inexperienced persons who do the cleaning. ● Personnel who really don’t want to be working in sanitation. ● Employees who have absentee issues. ● Persons who ended up in sanitation because there was no place else to employ them.
