SEEING RED

Burger King Japan first brought its customers the Kuro Burger. Now, the
Japanese can enjoy a burger of another color - the "Aka Burger," which
translates to "red." Burger King Japan released the Aka Burger on July 3.
The Aka Burger is served on red buns (colored with tomato powder)
and topped with red tomatoes, red cheese and an "angry" sauce made
of chili pepper and chili paste. The red burger is part of a series of red
foods offered at the quick-service chain's stores in Japan. An Aka Samurai

YOU SPICY DEVIL
Bacon makes everything better, and
that now includes bagels at Einstein
Bros. Bagels. The company recently
launched a line of Bagel Toppers
which feature open-faced bagels
topped with a variety of innovative
ingredient combinations. For bacon
lovers, there's the Spicy Devil - a
toasted bagel with Jalapeno Salsa
shmear, bacon and sliced jalapenos.
The other three Bagel Topper
options are the Herbivore, Berry
Goodness and Nutty Monkey with
Nutella. And for those who can't make
up their minds, customers can mix and
match any two Bagel Topper halves.

CYLINDER SEASONING
Move over meat injectors, product
developer Locke White has rolled out
an innovative solution to create meat
dishes with flavor from the inside
out. Enter Meats with Seasoning
Cylinders.
Here's how it works: Meat cutters
at the grocery store or at meat
processing plants insert tubes made
of coated cardboard or plastic into
muscle cuts of meat. The seasoning
cylinders keep the holes open for
the customer to insert their favorite
meat seasonings. A small portion of
the cylinder is accessible for the end
user to pull out the cylinder at the
appropriate time.
White says the seasoning cylinders
make it easier for retail meat
counters and meat processors to help
consumers put seasoning inside the
meat. The cylinders also can be used
in fresh vegetables and fruits.

ON THE SALMONELLA TRAIL
The US Dept. of Agriculture has
developed a tool to track various
strains of Salmonella.
Intergenic Sequence Ribotyping
(ISR) is being used to serotype
strains within Salmonella enterica,
a particularly virulent group of
pathogens that is associated with
foodborne illness. USDA says ISR
is driving improvements in poultry
production and human health
internationally by helping producers
control Salmonella in the field and in
consumer poultry products.
The ISR diagnostic tool is
available to specialized laboratories,
producers or other qualified users
who sign a proprietary Material
Transfer Agreement.
