CONTINUOUS FRYERS
One fryer does not fit all applications - so Heat and
Control offers standard and custom-built fryer systems for
small- to large-capacity cooking of coated and uncoated
poultry, meat, seafood and other
prepared foods. Uniform heating
of cooking oil assures consistent
finished product using externally
heated and direct-heated natural
gas, electric or thermal fluid
heating. All fryers operate with
minimal oil volume to deliver fast
oil turnover rates for the freshest
finished product.

The first vacuum
pump with hygienic
design in the world
has been introduced
by Busch Vacuum
Pumps and Systems. This new rotary vane vacuum pump
was developed specially for foodstuffs packaging with tray
sealers and thermoforming machines, and is designed to
be cleaned using steam jets and conventional detergents.
The unit surfaces are smooth and slightly inclined,
allowing water and detergent to drain away after cleaning
to leave a residue-free finish.

SPECIALTY PEPPER EXTRACTS
In response to consumer demand for more specialized
heat, particularly in certain chili pepper varieties,
Kalsec introduced the extension of its specialty pepper
product line at IFT in July. New chili pepper varieties
will include cayenne, pasilla and the ghost pepper
extract. Current Kalsec specialty peppers include ancho,
guajillo, habanero, jalapeno, poblano and Szechuan.
The new specialty peppers are extracted in the US using
proprietary expeller-press technology that is consumer
label friendly.
