THE INSIDER FROM INCEPTION TO UBIQUITY Adam Albright Retailers and foodservice operators looking for the next big meat product might need to consider the menu adoption cycle before making any big changes to their meat cases and menus. Datassential's Jack Li told attendees at this year's Annual Meat Conference in Nashville that knowing what stage of the cycle the food is in - inception, adoption, proliferation or ubiquity - can help determine whether or not to start offering the item. Foods in the inception stage, typically found in fine dining and ethnic independent restaurants and in ethnic grocers, include nduja sausage, chicharrones and branzino. Adoption cycle foods, like porchetta and pancetta can be found in food trucks and gourmet food retailers. Li says when it comes new foods, it's best to offer a bit of everything. "The inception and adoption stages ... that's where all the buzz is," he said. "But stages 3 and 4 have all the volume. You have to find a balance of both." HOLD THE MEAT OVERherd "Consumers are so confused about GMOs it should stand for 'Got Many Opinions' instead." On Leap Day only, Arby's offered the company's first-ever vegetarian menu, highlighted by the company's normal sandwich lineup - minus the meats that are usually between the buns. "At Arby's, we're proud of our meats, but we also understand that meat isn't for everyone," said Rob Lynch, chief marketing officer and brand president of Arby's. "If it goes well, we'll likely bring back the vegetarian menu on Feb. 29 each Leap Year." The regular meat-filled menu was also available on Feb. 29.
