JULY 23 12:30 - 3:30 P.M. 100 enturyLink Center in Omaha, Nebraska, will play host to the American Association of Meat Processors 77th American Convention scheduled for July 21-23. As in previous gatherings, big opportunities await small and medium-size meat processors. Attendees can kick off their convention experience on July 20 with a pre-convention bus tour of AAMP member facilities C&C Processing Inc. and Wahoo Locker. The Welcoming Session will feature Trent Loos as keynote speaker. Loos is the creator of "Loos Tales" which is a multimedia platform for his videos, blogs and photographs about life on the ranch. Loos also is known for his "Rural Route" radio broadcast. The Outstanding Service Award and the F.W. Witt Supplier of the Year Award will be presented during the Welcoming Session as well. Demonstrations scheduled for the convention include BBQ Basics and Jerky Demonstration. Educational sessions include an update on Hazard Analysis and Critical Control Point protocols. In the "What's New with HACCP" session, attendees will learn about new and upcoming regulations and potential impacts on meat processors. Jenny Dewey, of Chico Locker & Sausage Co., Chico, California, will provide insights into why processors should engage social media. MEAT+ POULTRY | 06.16 | www.meatpoultry.com Dr. Terry Houser, an associate professor on the Animal Science faculty at Kansas State Univ., Manhattan, Kansas, will lead the Animal Care and Humane Handling session, which was developed to help plant personnel comply with livestock handling regulations by developing and critiquing standard operating procedures for animal handling. A welcome reception at the Durham Museum will follow the first day of the trade show on July 21. The AAMP convention also makes time for association business. The State Officers' Conference is a chance for AAMP's affiliated meat associations to discuss association issues and meet with other AAMP officers. The conference is scheduled for 9:30 to 10:30 a.m. The Business Meeting on July 23 will feature a report on the state of the small plant operator in the meat and poultry industry. Attendees will also discuss elections to AAMP's board of directors. At this session, awards will be presented for Best Single and Best Multiple Booth Awards, Stephen F. Krut Scholarship Award, and the Golden Cleaver Award. A major highlight of the AAMP convention is the American Cured Meat Championships. This year's competition offers more than 25 classes from which to choose, including the 2016 Featured Class of All-Beef Smoked Dinner Sausage. The top four entries will be named Grand Champion, Reserve Grand Champion, Champion or Reserve Champion. The Cured Meats Hall of Fame induction ceremony will take place during the ACMC awards ceremony on July 23. Wrapping up the convention will be the Closing Social.
