As the bacon craze continues, innovative products
such as bacon jam invade the marketplace

ichael Oraschewsky remembers well
when the bacon craze began to swirl.
"I started thinking about bacon a lot.
I mean, about all the possibilities - far beyond
'bacon and eggs,' you know?" he says with
a laugh. Three years ago, those thoughts, a
partnership and some innovation resulted in a
method of spreading the unmistakable taste of
bacon, literally.
Oraschewsky, owner of the Conshohocken
Café in suburban Philadelphia, has been in the
restaurant business for virtually his entire life.
"I started bussing tables and washing dishes in
Lancaster...when I was in my teens. I worked
at Market Fare, a fine dining restaurant, now
Carr's, and never stopped doing it," he says.
Oraschewsky went to Millersville Univ.,
where he majored in international studies
and German linguistics, and while attending
classes, worked at two other local restaurants,
Mulberry Street Café and Gibraltar's.
"After graduating, I opened a small catering

and lunch place in Conshohocken - On-a-Roll
- which I had for eight years," the 35-year-old
restaurateur says.
Oraschewsky was a chef, a restaurateur
and food truck owner. Bruce Kramer, now
his partner, graduated from Drexel Univ. with
a degree in engineering, and has systems
planning and implementation experience. He's
also an avid home brewer, and is a member of
the Beer Judge Certification Program. In other
words, he knows good beer and great food.
Three years ago, Oraschewsky and Kramer
started The Bacon Jams. The two launched a
campaign on Kickstarter, the crowdfunding web
site, and raised $12,000 to start the business.
Oraschewsky's title is, "Executive Boar." His
product: Bacon "jam." Originally sold just at his
restaurant and on a website, the jam is now sold
online, in grocery stores and shops all across
the US, Canada and the Caribbean.
"Initially we sold $30,000 worth of bacon
jam in 30 days, and it just took off from there,"
