SEPARATION SOLUTIONS
Versatility was also on display at IFFA 2022 with
Provisur's new Soft Tissue Separator (STS), a belt
separator that reliably separates bones, tendons and
cartilage from meat, poultry and fish products as part of a
system that can be integrated into a Provisur production
line. The new Soft Tissue Separator STS is available in
four different sizes: STS 800, STS 1200, STS 2000 and STS
3000.

TIME TO IMPROVE
Perhaps nowhere is the adage: " Time is money, " more
applicable than in a meat processing plant. Ironically,
one of the key components in the production of highend
specialty products like air-dried ham, pancetta and
Black Forest ham, is time - with dry-curing process often
requiring climate-controlled storage of three to six months
or more. At IFFA 2022, Provisur showcased its Lutetia
brand of tumblers, which facilitate not only efficient and
faster defrosting of frozen meat blocks of up to 20 kg while
preserving yield and product safety, but also are used to
shorten those storage times to just weeks using its patented
Proactivation Technology. Lutetia's tumbling technology is
also capable of performing cryogenic cooling and freezing
as well as cooking products.

through the years as developer and pioneer of the tumbler
technology, we have been able to develop this new, now
patented application, " said Philippe Longo, Commercial
Director with Provisur Technologies. " It is optimally
tailored to cured meat and especially clean label products.
The Proactivation Technology helps our customers to
achieve higher yields, even more efficiency in the processes
- and, above all, products of outstanding quality. "
For processors of clean-label, dry-cured meats,
Lutetia's Thermoactivation and Proactivation technologies
ensure product maturation, water binding and maintaining
sliceability by producing a shelf-stable gel. Proactivation
Technology is suited for manufacturing clean label
products, including those without preservatives,
flavor enhancers, colourings or aromas. The absence of
certain ingredients makes conventional processes more
demanding and often requires technologically very
powerful equipment.
This newest application for the Lutetia line of
Provisur's Lutetia tumblers and massagers add value in a
variety of manners, including defrosting frozen meat and
marinating fresh products.
The STS line is also well suited for depacking, when
processing defective articles or those with expired bestbefore
date. In these cases it cleanly separates product and
packaging. The STS ensures high-quality end products and
higher yields. This is achieved by a variety of innovative
features and through the optimal coordination of all line
components.
