step and technology has evolved with
the times to make the task easier, safer
and quicker.
More processors are benefitting
from the development of fully automated
grinding and mixing lines now offered by
many industry suppliers.
" This technology has been around for more
than 10 years, but when fully automated systems
started, it was mainly for the large processors
working with QSRs in the United States, " said
Jeff Braunreiter, associate product manager for
Provisur Technologies Inc., Mokena, Ill. " The difference
now is we are seeing more medium to
small processors start to put more focus on that

The automated grinding
and mixing technology
of today can benefit
meat and poultry
processors of all sizes.
Part of this trend is due to the lack of staffing
which was magnified by the COVID-19 pandemic.
While less people were either unable to work or
choosing not to, the ground beef demand did not
decrease, and it actually grew.
Data from San Antonio, Texas-based 210
Analytics revealed ground beef sales generated
$11.3 billion the first year of the pandemic, netting
approximately 86% of all grind dollars and an
almost 10% increase over pre-pandemic levels.
That demand required a lot more output and
the labor force to make that happen. But one
way for processors to overcome the labor shortage
while keeping up with demand was to automate
as much as possible.
" For Provisur, this was an easy problem to
solve as we have been doing fully automated
system integration since the introduction of this
technology, " Braunreiter said.
INNOVATIVE EQUIPMENT
Nu-Meat, an East Brunswick, N.J., company, represents
Austria-based Laska mixers and grinders.
