With the appropriate prevention and
elimination techniques, foodborne pathogens
and foreign material contamination can be
dealt with before any food leaves the facility.
Processors who are proactive can prevent
food safety risks and hazards at all stages of
production - from processing to packaging.
Hygienic design
The design of processing equipment used
in meat and poultry plants plays a crucial
role in helping control potentially hazardous
foodborne pathogens to ensure safe, sanitary
environments for food production. Oftentimes
the food safety burden is placed on the
shoulders of the processor, however the
concept of hygienic design is where processing
equipment manufacturers can make valuable
contributions to help ensure food safety.
" Design of equipment across the industry
has been on a trajectory of continuous
improvement for a very long time, and even
the most complex equipment produced these
days has been designed with sanitation and
food safety in mind, " Galindo says. " Producing
equipment that is easy to clean and inspect
helps companies improve both efficiency and
helps them ensure the products produced are
safe and wholesome. "
In 2020, in response to increased foreign
material contamination and product recalls
impacting food safety, NAMI formed a
Food Safety Equipment Design Task Force
to develop operational guidelines for
controlling and preventing foreign material
contamination within meat and poultry
processing plants. Part of NAMI's Food
Safety Equipment Design Task Force initiative
was to update and release a third version of
its Food Safety Equipment Design Principles
and check list. The principles include making
sure equipment:
1. Is made of compatible materials;
2. Is accessible for inspection,
maintenance, cleaning and sanitation
3. Does not allow for product or liquid
collection (equipment should be
self-draining);
4. Ensures hollow areas are
hermetically sealed;
5. Does not contain niches;
6. Observes sanitary operational
performance (the equipment must
perform so it does not contribute to
unsanitary conditions);
7. Contains hygienic design of
maintenance enclosures;
8. Is hygienically compatible with other
plant systems such as electrical,
hydraulics, steam, air and water;
9. Is cleanable to a microbiological
level; and

10. Features validated cleaning and
sanitizing protocols.
