Alliances and strategic partnerships are vital to any industry, which is why the
RCA encourages members to engage with the culinary and food science world
through multiple facets. Food waste is one of most pressing issues of our time.
The RCA interviewed Turner Wyatt, chief executive officer and co-founder of the
Upcycled Food Association, to learn about the alliances forged amongst upcycled
food companies to group their products under one unified banner and amplify
consumer awareness.
Can you tell us a bit about the history and mission of the
Upcycled Food Association?
Turner Wyatt: We were formed in 2019 by a group of businesses from
around the country who recognized a huge opportunity in the food industry
in alignment with a more circular food economy. We realized that companies
using otherwise wasted food ingredients for new products were not really
acting as an industry. So those companies came together to form the
Upcycled Food Association, and since then we've grown into an organization
of 185 businesses in around 20 countries working to strategize on how to
build the upcycled economy.
What do you think food technologists and product developers
should be considering when developing products?
Mr. Wyatt: I love research chefs, product developers and food technologists
because they are the unsung heroes of the food system. Product developers
have the ability to bring sustainability and that message into the mainstream
by including upcycled ingredients in not only those diehard, upcycled brands
but in everyday brands - because for most ingredients that are out there
there's an analogous upcycled alternative. One resource we have is our
Ingredient Finder on our website, which is the most up-to-date list of all
current Upcycled Certified ingredients.
What is the Upcycled Food Certification seal?
Mr. Wyatt: Upcycled Certified is the first product and ingredient certification
program to help consumers identify which products are upcycled. After
launching a few months ago, we are already seeing the impact on consumer
awareness. We are now better equipped to quantify the impact of these
ingredients and products. So far, there's already 3.3 million lbs of annual food
waste prevention on account of the products being created. From a product
developer's standpoint, including upcycled ingredients can give your client
the ability to make big sustainability claims as the certification has such a
clear one-to-one impact statement and claim.
