MEMBER profile 10 years later- Remembering Hurricane Katrina In the immediate aftermath of the August 2005 storm that battered New Orleans, just as the flooding began to clear and the level of need became apparent, Chef John Folse was ready to make a move. Situated 60 miles from the besieged city, Chef John Folse & Company, Donaldsonville, La., weathered Hurricane Katrina well and the company sprung into action. Chef Folse put his Louisiana knowhow and vast culinary connections to good use, rolling out a largescale food drive by reaching out to affiliates within the Research Chefs Association and the American Culinary Federation. Donations and fundraisers were in the works within a matter of days. Trucks loaded with food from companies both small and large rolled into town, and Chef Folse made the resources available to both the American Red Cross shelters and independent shelters by establishing drop centers where much needed items were collected. Raw ingredients were sent to his Donaldsonville plant for immediate cooking, then forwarded on to shelters to feed the victims and refugees of the tragedy. Ten years after Katrina, Chef Folse remembers responding to the call for help as a life-changing experience. "After all the devastation of Hurricane Katrina, the generosity that came from friends and strangers from across the country was truly overwhelming," Chef Folse said.  "Amid disasters such as this, the best of humanity certainly shines through."
