ong gone are the days when consumers could divide their food world neatly
into 'natural' or 'conventional,' and 'healthy' or
'pleasurable,'" said Laurie Demeritt, chief executive officer, The Hartman Group, Bellevue,
Wash. "Now they navigate a complex palette
of shades of quality, whose resonance shifts
based on the category, the context and the
consumer."
This makes it challenging for culinologists to formulate "natural" foods. Adding
to the ambiguity, the US Food and Drug
Administration (FDA) does not explicitly define
the term natural and any such effort is a very
low priority for the current administration. For
now, FDA states, "From a food science perspective, it is difficult to define a food product
that is natural because the food has probably
been processed and is no longer the product
of the earth."
The regulatory agency claims a longstanding policy concerning use of the term. It considers the term to mean that nothing artificial
or synthetic has been included in, or has
been added to, a food that would not normally be expected to be in that food. However,
the policy was never intended to address

food production methods, such as the use of
pesticides, nor did it explicitly address food
processing or manufacturing methods, such
as thermal technologies, pasteurization or
irradiation. The FDA also did not consider
whether the term natural should describe any
nutritional or other health benefit. All of the
latter, however, have become part of today's
conversation regarding natural foods and
beverages.

Perceiving natural
To gain a better understanding of consumers' perception of natural ingredients,
Ingredion Inc., Westchester, Ill, conducted a
study across different food categories. The
research showed that the recognition and
acceptability of ingredients, and their perceived or real naturalness, varies according
