Reducing liquid is a time-honored
culinary technique that offers a
boost of flavor - and plenty of
opportunity for customization

reduction is the simplest form of concentrating and thickening sauce, broth
or cooking juices. It is a process that involves
extensive cooking over low temperature in
order to evaporate water from a fluid solution.
The flavorful solids content increases, capturing the true taste of the solution. This clarity of
flavor is then used to season foods, often in
the form of a glaze or drizzle.
Beer, wine and spirits may also be reduced, often to as much as a 10-fold concentration. Heat not only cooks off the water; it
evaporates the alcohol. This allows formulators to add the flavor of beer, wine and spirits
to foods without adding alcohol or paying the
federal alcohol excise tax.

The heat may also dissipate some compounds as well as alter others in the liquid
matrix. Careful craftsmanship ensures this
process is positive for the end product.
"Reduction is a time- and temperaturecontrolled process to ensure product
consistency," said Dave Sackett, executive
director of sales and marketing for food ingredients, Mizkan America, Mount Prospect,
Ill., a company that produces ready-to-use
reductions for industrial food preparation
and foodservice.
Mizkan's process replicates the traditional
reduction techniques chefs use, only done on
an industrial scale, according to Mr. Sackett.
