The RCA Event in Napa:
Six cuisines, two days,
one uniquely immersive experience

This fall, the RCA hosted its first-ever, two-day, immersive experience in Napa at the Culinary
Institute of America (CIA) at Copia. Culinologists gathered in the nation's wine capital to collaborate in small cohorts and took part in a hands-on learning experience with experts.
Featured cuisines included: Pacific Rim fusion, Southeast Asian, Latin American in
collaboration with Potatoes USA, Norwegian in collaboration with the Norwegian Seafood
Council, Indian street food and Northern California artisanal bread. Each was selected with
help from Datassential, an RCA partner that specializes in food trends via predictive analytics.

Students enjoyed hands-on learning experiences with experts.

Intimately-set demonstrations allowed participants to be fully engaged
"To be able to curate and present a selection of breads from the region's
best bakers was like hanging an art installation and taking folks on a personally
guided tour," said Chef Mike Kalanty, who focused on Northern California
artisanal bread. Chef Kalanty helped participants understand sourdough flavor
through a historic lens, from the 1849 Gold Rush style to late 20th century
artisan breads, and up to present day with natural yeast leaveners. "To have
opened the minds and palates of attendees in this interactive format brought
value that is larger than the sum of its individual parts," he said.
