Another durable entree vegetable is the eggplant. It has
a meaty texture that absorbs
flavor. The miso eggplant is the
longest running menu item at
The Tasteful Kitchen.
"While I have tried many varieties of eggplant, I prefer the
ubiquitous Italian eggplant," said
Ms. Thompson. "I like to cut it
into half-inch rounds, coat them
in corn meal and then pan fry the
rounds until they are about half
cooked. They get finished in the
oven with miso glaze."
The eggplant is served with
rice, sautéed Asian vegetables,
coconut curry sauce and a
sweet soy reduction. A garnish
of fresh scallion, black sesame
seeds and cilantro completes
the dish.
Whole plant food is the future
of the plant-based movement.
"We anticipate 'plant based' to
largely go the way of 'natural' as
consumers seek out more plantrich offerings that include more
mindfully sourced ingredients
with greater attention to farm-level distinctions," said Ms. Abbott
of the Hartman Group. "Overall,
it's less about 'meat' as the
problem and more about 'factory
farming' and 'Big Ag' perceived
as being more about profit than
well-being of people, animals or
the planet." *
