Finding culinary roots
RCA Chicagoland goes foraging
Last fall, the RCA Chicagoland Region worked with a local
foraging expert and Bell Flavors & Fragrances to host a foraging
event. Guests observed mushrooms, berries and nuts in a forest
preserve, and closed the evening with a dinner of locally foraged
ingredients.
To learn more about the inspiration behind this event, we
spoke with RCA Chicagoland Regional Education Committee
Chair Chris Warsow, who is also director of culinary applications
and corporate executive chef at Bell Flavors & Fragrances.

Q: 

What was the inspiration that brought this event to life?
Mr. Warsow: Foraging has gained popularity, and it ties to the wellness trend
happening in the industry. Collecting your own food gets you in touch with the
environment. What better way to gather your dinner? Foraging and local foods is also
a macro trend that Bell is highlighting this year.

Q: 

This was a great opportunity to use seasonal ingredients.
Can you tell us more about that?
Mr. Warsow: What's available in the forest changes weekly. Things common in the
spring may mature into something less delectable, like fiddle heads. The small ferns
are tender when they emerge from the soil in the early spring, but later turn into woody
plants. Certain mushrooms are only available a few weeks of the year, while others
can be found year-round. Our expert's favorite time to forage is late July and early
August. That time of year shows the best diversity and abundance.

Q: 

What is the value of learning outside your day-to-day element?
Mr. Warsow: As a profession, we often get trapped indoors doing our jobs. It's great
to get outside and show people part of the environment that you may walk past every
day. We have food at our feet that oftentimes goes unnoticed. I love being outdoors
and sharing that with others.
