THE EQUALITY FACTOR

Producing sausages of
consistent length and weight
can pose difficulties because
of the inherent nature of
its ingredients, but it is
increasingly pivotal. Retailers
and foodservice operators,
along with consumers, are
looking for equally portioned
sausages that look the same
in the package or on the plate
and cook uniformly.
Expectations for consistency
are justifiably high, says Stefan
Neumann, a certified German
Master Sausage Maker, Master
Butcher and product specialist
at Reiser.

there is a lot of innovation and
thought that goes into delivering
those attributes to consumers

after that. "Product length will
always be a challenge, given
natural casings and naturally
different diameters from one
end to the other."
For their part, sausage
processors strive for exact
or close-to-exact portions so
they can reduce giveaway and
therefore increase profitability.
"If we help the processor
achieve a consistent product
surface texture, weight, length

control and net weight package
for less giveaway, this allows
for the best price for the
product," remarks Neumann.
As demand for sausages
remains strong around the
world, sausage manufacturers
of all kinds, particularly smaller
processors, can achieve
consistency by optimizing their
methods and equipment.
