International-inspired dishes
can be ﬁne-tuned to meet
today's dietary trends.

Jones says the company ﬁrst experimented with
Ahimi, a popular plant-based sushi made from tomatoes and a few other simple ingredients. But the results
weren't exactly what Hissho was looking for.
"For us, it just didn't meet our standards, so we went
with the roasted red bell pepper, which photographs
beautifully and, even better, tastes delicious," Jones says.
"It really is leveraging the trend where consumers are
looking for things that provide them with higher protein,
or at least comparable protein, in a meat substitute.
People want to be healthy, but they don't want to sacriﬁce taste, and this is right up that alley."
Ahimi, however, is having success of its own. Billed as
the world's ﬁrst alternative to raw tuna, it has made its
way onto the menus of reputable sushi restauraunts and
counters nationwide.
Ahimi is made from tomatoes, but the texture and
ﬂavor of the tomoto are transformed using a special
technique, the company says. It says the appearance and
texture are indistiguishable from raw tuna.

Right on time

HISSHO

When dealing with international cuisine and ﬂavors that
might not be widespread across the U.S., it's important
not to be too early.
Sure, being among the ﬁrst to embrace a burgeoning
trend might have some perks, but it might also set you
up for failure.
Poke - a dish originating in Hawaii wth heavy
Japanese inﬂuences - is a prime example.
Hissho provides a case study. The company is now
having success with its poke bowls, enough so that it
plans to introduce two new ﬂavors later this year. But the
ﬁrst go-round didn't go so well.
"There are things that are so forward-thinking that
we know it's probably not the right time," Jones says.
"The poke bowls we're launching are not our ﬁrst foray
into poke bowls. We've had them for years. Because the
market wasn't ready for them, they weren't successful, or
as successful as we wanted them to be. So we tabled it
and now, in regions where it is more common, the chefs
have the ability to make that."
