RETAILERS HOLD THEIR FACILITIES to rigid quality assurance and sanitation standards to make sure consumers receive fresh, wholesome products.
And while these standards are vital in all areas of the store, they take
on an even greater meaning in the fresh perimeter departments.
That places a high level of importance on the cleaning and sanitizing
of the equipment used to prepare and package foods, many of which
are made for immediate, or relatively quick, consumption.

The National Alliance for Food Safety says
it's 8 times more likely to detect listeria from
the deli than commercial prepackaged meats.

KEEPING SLICERS SAFE
The deli slicer is perhaps one of the first things
that comes to mind with discussing equipment sanitizing, and for good reason. Product
that leaves the slicers is placed into a package
and taken home, where shoppers consume it
straight from the bag. There are no kill steps
or cleaning opportunities for sliced meats and
cheeses.
"Potentially, retailers may not provide
adequate training to employees regarding the
cleaning and sanitizing of food prep equipment, like slicers," says Carolyn Bilger, senior
marketing manager for Troy, Ohio-based
Hobart. "Or operators may not implement the
process as frequently or as thoroughly as necessary due to the difficulty of breaking down
the equipment."
For starters, choosing a slicer with removable parts can make the sanitizing process
easier - and safer - for employees. It enables
workers to ensure that all surfaces, including
the blade, are thoroughly cleaned. If not, it
can lead to bacteria settling in the grooves or
nooks of the slicers, which increases the risk of
food-borne illnesses.
"Hobart slicers feature a removable blade
and components that allow operators to easily
disengage parts for more thorough cleaning
and sanitation - and enhanced food safety,"
Bilger says. "Our removable blade technology
also features a tool that completely encases
the knife during removal to simplify cleaning and minimize operator interaction with
the blade."
She says the slicers also feature a removable
top cover than can be taken off and placed in
a dishwasher or sink, as well as removable ring
guard covers, a removable feed grip arm and
a product tray that can be tilted and removed
for cleaning.
"These components are key," Bilger says.
"They make it easier to be thorough in the
cleaning and sanitation process. It may seem
like it would take longer to remove slicer components for cleaning (compared to cleaning a
standard slicer that doesn't come apart, but it's
actually much more efficient for operators of
all skill sets."
