Deli/prepared departments need to have flexibility in their offerings, Ott
and Knab say. Portion sizes, the ability to add or omit ingredients, and
made-to-order options can all give customers that reassurance that
their store is the best at meeting their expectations and needs.
More and more, retailers are being practical when it comes to finding
deli design fixes that aren't overly hard to achieve, they say. Small things
like " face forward design, " for instance, can go a long way in making
delis great.
