Complex Seasonings Create New Markets Y Yes, even foodies can crave pork rinds. Dozens of cooking shows, websites and social media outlets have shown millions of Americans some of the best foods they have never been exposed to before, and one of these classic snacks is pork rinds, according to Mark Singleton, vice-president of sales and marketing, Rudolph Foods Co., Lima, OH. "We are hoping to capture new consumers in light of the recent rise in the foodie culture," he noted. "During the past several years, the category was driven by the growing market for Hispanic and ethnic flavors. This was because of demo- graphic and food trends overall. Today, we find that low-carb awareness, paleo dieting and a return to comfort foods all drive pork rind consumption." New products are also helping to appeal to this foodie culture. Rudolph Foods has introduced several flavors of pork rinds, including Habanero and Tejalapeno, which are reflective of how Mexican cooking and Southwestern culinary trends are impacting the snack industry. These flavors contain complex, multi-layered seasonings, and they're not simply hot and spicy, Mr. Singleton emphasized.
