attract new consumers, adventurous flavors and great
taste keep them coming back.
Evans Food is launching its new Mac's Chorizo this
year. "Our Mac's Chorizo flavor was inspired from the
roots of our company providing our customers with
something different, a 'meaty and spicy' flavor, and
our consumer panel described 'a crunchy snack with
irresistible flavor,' " Mr. Guerra said.
Pork rinds also satisfy those consumers dedicated
to paleo and low-carb diets. Rudolph Foods has more
than 90 recipes on its website to demonstrate how to
use pork rinds as an ingredient, including pizza crusts
and breading for fish and chicken.
"Pork rinds also enjoy appealing free-from claims as
they are carb- and gluten-free," said Kelly McGolrick,
vice-president of category management and customer
marketing, Shearer's Snacks, Massillon, OH.
Mr. Guerra noted tremendous growth for cracklin'
items from 1.75- to 3.5-oz bags with double-digit
growth in convenience and multi-outlet sales reports in
the last 52 weeks ending Feb. 19, 2017, according to IRI.
Consumers' fascination with food functionality is
the key to meeting trends for snacking occasions.
Rudolph Foods has broadcast pork rinds' functionality on its website. Messaging on packaging has also
made a difference.
"For years, we offered pork rinds in a clear bag, but
consumers want the best packaging for their foods
to keep it fresh and impart information about what's

in their food, why it's good for them, and the story
behind the company that makes it. We've listened to
the customer, and we want to give them what they
want," Mr. Singleton said.
No matter the category, listening to consumers is
key. And right now, the pork rind market is making
plenty of noise for more.
