"Health and wellness claims, like lower sugar content for boomers and younger consumers who seek

and MSG.
As with other categories, flavor profiles for meat
snacks are influenced by international cuisines.
Producers are using herbs and spices like rosemary,
curry, kimchi, adobo and turmeric, according to FONA.
Minneapolis-based General Mills' Epic brand makes
bars from a variety of meats, including Alaskan salmon.
True Jerky, San Francisco, offers a spirit-infused line of
flavors, including Honey Bourbon Brisket, Blackberry
Merlot Beef and Citrus Chardonnay Turkey.
While popular attributes including high protein, portability and unique flavors benefit all brands, innovation
among smaller, niche brands are drawing attention.
There are a few producers who have created meat
crisps that are more crunchy than chewy.
"Thin meat chips and crisps deliver the protein consumers are seeking with the crunch of a cracker or
chip," Ms. Nielsen said. "This new format delivers a
crispy texture and may be considered a healthier snack
alternative to classic potato chips."
Boulder, CO-based Wilde Brand's chips are made
from chicken, cassava root and coconut oil and contain 15 g protein. Meat snacks are showing that the
sky is limit when it comes to healthy innovation.
