" Brands should focus on stacking
emerging ingredients with well-known
flavors and premium preparations
to add excitement to the category
without alienating consumers, " Ms.
Fabbri said. " Using clear terminology
and drawing analogies to familiar flavors
will boost ingredient awareness
and encourage trial. "
NatureBox, Redwood City, Calif.,
offers Turmeric Black Pepper popcorn
for anti-inflammatory benefits
and Sea Salt brownie protein bars
containing ashwagandha, a shrub
found in India and the Middle East,
for immunity and brain health benefits.

Wis., provides crunchy snacks, including products
called Quinoa Crunch, Simply Seeds and Hemp
Hearts. It also offers protein clusters for targeted
nutrition throughout the day with their Morning
Jump, Afternoon Boost and Evening Chill varieties.
To make use of another adventurous ingredient,
South Mill Champs, Kennett Square, Pa., has
Shrooms mushroom snacks. Lewis Macleod, chief
executive officer, said the company's products have
benefited from mushrooms' popularity as people
search for more healthful snacks.
Phoenix-based Crafted Energy produces bars
designed specifically for different types of athletes
from runners to cyclists. The runner bar, for
example, uses pineapple for natural pain relief,
cacao for a mood booster, and ginger root and
coconut oil for immunity-boosting benefits. The
cyclist bar, on the other hand, uses oats and coconut
for brain function and cashews and dates
for muscle soreness.
As more ingredients are being used for targeted
benefits, consumers are expanding their knowledge
about these ingredients.
