2 | Pr CheckOut At the Hard Rock Hotel & Casino Punta Cana, celebrity chef Kerry Simon unveils his highly anticipated Simon Mansion & Supper Club in August. The modern American restaurant will serve California/Caribbean-inspired cuisine with a strong focus on seasonal comfort food. Definitely something new for the Dominican Republic. Things really get moving with the many different private dining spaces, each designed like an individual room within a rock musician’s glittery mansion. Highlights include a broken glass chandelier, oversized throne chairs, mirror artwork and a central sushi bar. Staying true to modern cuisine is a priority for Chef Simon, who installed an organic garden on property. Try the Mansion Kobe Burger with aged white chedder, creamy onion marmalade and fresh veggies from the garden. We’re hesitant to recommend the “Junk Food Platter” but it sounds really good: vanilla milkshake, cotton candy, caramel corn, chocolate cream candy and cookies. Meanwhile, the bar features rum cocktails like vanilla mojitos and a classic Mai Tai with fresh juices and fruits.
