in every dining experience, with a focus
on locally sourced produce. Last year,
Salamander unveiled NOPSI Hotel, New
Orleans, the first luxury property to open in
that city in a generation. Conveniently located
for meetings in the Central Business District,
the building was once the headquarters of
the city's power and transportation company,
and the historic conversion features a
ballroom highlighted by exposed brick
and 30-ft ceilings. The hotel's restaurant,
Public Service, offers a menu that combines
traditional New Orleans recipes with modern
flavors, and is prepared by chef Farrell
Harrison and team in an open kitchen with a
modern raw bar and open flame rotisserie.

Coming This Summer

Salamander properties boast a range
of culinary programs that draw on local
inspiration. At Hammock Beach Resort
on Florida's Palm Coast, Executive Chef
Kevin Luque can create a customized
private dinner for groups in the kitchen of
one of the hotel's multi-bedroom suites
that can be hired for exclusive events. The
resort's Ocean Grille restaurant combines
coastal scenery with shore-to-table dining,
complete with views of fisherman boats
through its floor-to-ceiling windows. At the
Reunion Resort in Orlando, dining at the
11th-floor farm-to-table restaurant, Eleven,
comes with a nightly fireworks display.
Over the past two years, Salamander
has opened two luxury properties tailored
to meetings and incentives planners. The
Henderson, on Florida's Gulf Coast,
overlooks white sands and emerald sea.
The resort recently announced the arrival
of Executive Chef Gary Palm, who will be
offering authentic Gulf-to-table cuisine

Salamander will soon open the 179-room
Hotel Bennett in Charleston, S.C. Positioned
on the city's famed King Street overlooking
historic Marion Square, the luxury property is
inspired by European design and will feature
a two-tiered restaurant with outdoor seating,
and a stylish bar and lounge, as well as a
rooftop pool and bar, luxury spa, patisserie,
and more than 12,000 sf of event space.
"Salamander offers planners a true
independent luxury experience that is
curated and cultivated for each group,"
says Slavonia. "For us, as an entrepreneurial
company founded by an entrepreneurial
leader, it's important to remain independent
of inflexible brand standards, yet still deliver
a level of consistency through immersive
experiences and exceptional amenities.
However, without doubt, the most important
standard in our company is the delivery of
impeccable service."-Steve Grasso

bought a 200-acre estate in Virginia and
named it Salamander Farm in homage to
his wartime exploits. Inspired by his story,
entrepreneur and philanthropist Sheila C.

each one serving a unique foodie destination.

recognize its importance, so much so, that
we built a cooking studio at Salamander

amazing space, which has a retractable

or spectacular dining experiences. Our
