IT'S ALL IN THE TOMATOES
-SIMPLE BRUSCHETTA RECIPE

1 fresh baguette, cut into
1/2 inch slices
8 roma tomatoes, chopped
3 tablespoons extra virgin
olive oil
4 garlic clove, minced
1/3 cup fresh basil, chopped
2 tablespoons fresh parsley
minced
1/2 cup parmesan cheese,
freshly grated
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground
black pepper
2 tablespoon balsamic glaze
(optional)
ruschetta pronounced " brusketa " in Italian, is one of my favourite go-to party appetizers.
With summertime in full bloom-this means more parties and get togethers-bruschetta
is easy to eat while being able to catch up with your bestie without getting messy. These
delicious zesty hand held bites are irresistible and will without doubt be a crowd pleaser!
TIP: Summer is the best time to choose tomatoes when they're at peak freshness.
STEPS
1. Prepare ingredients.
2. Preheat oven to 400 degrees F (200 degrees C).
3. Brush bread slices on both sides lightly with 1 tablespoon oil and place on large baking
sheet. Toast bread until golden for 4 to 6 minutes, turning halfway through.
4. Toss together tomatoes, basil, parsley, parmesan cheese, and garlic in a bowl.
5. Mix 2 teaspoons olive oil, kosher salt, and pepper.
6. Spoon tomato mixture onto toasted bread slices. Optional: Drizzle balsamic glaze for
tangy kick.
7. Serve immediately and enjoy!
