Pecorino Romano cheese, grated fine (about 1 oz.) 1 /2 tsp. sea salt Baby mixed greens 1 tbsp. fresh chives, chopped 2. Whisk together a dressing of lime juice, balsamic vinegar, 1 tbsp. olive oil and basil; set aside. 3. Preheat grill to medium-high heat until very hot. 4. Grill watermelon about 2 minutes per side until grill marks appear. 5. dress greens with dressing, 1 /4 c. cheese and 1/4 tsp. salt. 6. divide greens among four plates. top each with three slices watermelon, remaining cheese and salt, and a quarter of the chives; drizzle any remaining dressing (or more fig balsamic) over watermelon. 7. Grilling causes the sugars to caramelize; try this as a dessert with a fresh fruit sorbet.
