Expected effect to prevent the metabolic syndrome

There are an estimated 50 million people suffer
ing from the metabolic syndrome in the United
States , with obesity posing a serious impact on
public health. Research by the Japanese biotech-

nology firm, Hayashibara Biochemical Laboratories, is raising expectations for "trehalose " as a
functional food material that can lower the risk
of developing the metabolic syndrome.

Trehalose is a type of natural saccharide that has the
structure of two glucose molecules bonded together. It is
contained in mushrooms, Hijiki sea vegetable, shrimps,
enzymes and enzyme-based foods.
Trehalose is known to offer various beneficial functions,
e.g. inhibiting starch retrogradation , inhibiting protein
denaturation , providing freeze tolerance , maintaining
vegetable freshness, controlling moisture absorption and
reducing discoloration. This is wh y it is used as an excellent food additive in various fields.
For example, an omelet cooked with trehalose comes out
soft and smooth with fine texture. Avocado treated with
trehalose solution maintains its fresh green color even
after 14 hours.

Trehalose was traditionall y manufactured through an
extraction process from cultured yeast, which proved to
be costly. However, a new manufacturing method ,
developed by a Hayashibara research group in 1994,
enabled low-cost mass production.
Starch from potato and corn is applied with maltooligosy ltrehalose synthase (non-reducing saccharideforming enzyme) to fli p over the glucose unit at the end.
Then , the trehalose free enzyme is applied to separate the
two molecule units at the end to produce trehalose. The
method that repeats this process has reduced the cost of
manufacturing trehalose to one-hundredth of its ori g inal
cost.
This technology has dramatically expanded the use of
trehalose. Hayashibara manufactures and markets over
30,000 tons of trehalose each year for use in 20,000 types
of products by approximately 7,000 companies worldwide.
Trehalose is most commonly used in food products, but
its functionality has found broader applications including
pharmaceutical products and cosmetics for protecting
skin and hair from dryness.
