of intermediate proofing. After moulding, three dough
pieces fall into each pan.
The 12-strap lidded pans - six on each side - enter
the Stewart proofer about 1 hour before baking in a conveyorized
oven, which the bakery referred to as " making
bread the Middleby way. "
Following automatic delidding, the loaves are depanned,
then cool for about 60 minutes before entering
a Bradman Lake slicer and bagger followed by bag closing,
Mettler-Toledo metal detection and automatic basket
loading.
On the bun line, a Peerless mixer feeds a Stewart
extruder divider, which creates six dough pieces that
travel through rounder bars, then receive flour dusting
and about 60 seconds of rest before dropping into
30-piece pans.
After proofing, seeding and baking, the depanned
buns cool for about 50 minutes. They're next aligned
onto two side-by-side conveyors before they're indexed
and enter a Technopack wrapper to create six-packs
for retail.

before they are
placed in baskets
for delivery.
Serpentine system from Middleby Bakery that deposits
and bakes more than 30,000 cupcakes an hour. The cupcake
line features post-baked injection for fillings and
labor-friendly robotic depanning. The cupcakes then
pass through a Technopack wrapper prior to individual
wrapping and are placed in a 15-piece pack.
On the cake bar line, a TT Italy batter mixer supplies a
complete TT Italy production line featuring depositing,
baking, cooling, cutting, icing and decorating. The line
can turn out 30,000 cake bars or 24,000 Swiss rolls per
hour before receiving Technopack wrapping.
The Tannour flatbread line features a VMI mixer and
a complete Saltek production line that produces 4,000
loaves of bread per hour.
Moreover, the new Bühler/Haas wafer line comes with
Syntegon Bosch flowwrappers and can make 140,000
wafers an hour.
Mr. Khalil pointed out the facility, which sits on about
1 million square feet of land, is outfitted with ample water,
electricity and other infrastructure along with expandable
walls to accommodate long-term growth.
" We have room for one more line, and we eventually can
double the floor space, " he said. " We just want to see how
much demand there is for each product in the market. We
can add mixers and packaging equipment as we grow. "
In addition to organic growth within Jordan, Mr.
Khalil suggested that some Alyoum branded products
could start shipping beyond its borders as early as next
year and certainly within the next five years as its brand
and product portfolio grow.
" We're in talks with companies in neighboring countries
to start supplying sweet products to them such as
cupcakes, muffins, layered cakes and puff pastries, " he
said. " We're looking into selling breads to neighboring
countries like Syria because of the shelf life and freshness
of the product. "
In just a few years, this modern marvel of the Middle
East has come a long way, but for Alyoum Bakery, the
future is not tomorrow. It's " today. "
