The 2011 season, which affected the 2012 crop, was particularly difficult. “Over a thousand specialty coffee producers on the island went bankrupt,” laments Rebecca Atienza of Hacienda San Pedro, a fourgeneration-strong local coffee hacienda (plantation) and producer. The Bean Goes On Despite the challenges presented by labor and fuel costs as well as Mother Nature, perseverance is the byword of the new generation of Puerto Rican coffee producers. “Good, bad, we never stop working to maintain the integrity of Puerto Rican coffee,” Atienza asserts. That spirit is evident in Joaquin Gonzalez’s rough-hewn tasting room, Finca Cialitos in Old San Juan. Gonzalez, like Muñoz, roasts his own beans on-site. Direct competition with Goliaths such as CocaCola, he realizes, is out of the question. “But,” Gonzalez smiles, “what I can do is offer a fresh-roasted cup of authentic Puerto Rican coffee that I’ve grown.” And he does. Velvety, chocolaty, frothy, rich, and deep in flavor, a cup sells for the about same price you’d pay in a U.S. cafe, roughly $2.50 for a medium size. “In 2010, about five percent of all people in Old San Juan sought out a specialty coffee cafe like Cialitos, Hacienda San Pedro, Cuatro Sombras, or Café Cola’o,” Gonzalez says. “Now that number is twenty percent. And growing.” Taste education is partly responsible. “Specialty cafes here serve Puerto Rican–grown arabica-bean coffee, not blends of arabica and robusta like chain cafes,” Gonzalez says. “Blends can trouble your stomach. People are getting hip to that.
