Bread: The staff-and stuff-of life
Tiina D'Souza moved to Atlanta and couldn't find
the kind of rye bread she had grown up with in Taliin,
Estonia. It's a bit extreme to fly to Estonia and come back
with a suitcase full of bread, but desperation requires
desperate measures. Finally, it seemed sensible just to
make it herself, so that's what she did, and a business
was born. Baking in her Decatur home under a Georgia
Cottage Food License, D'Souza's EstoEtno Fine Bakery
turns out dense and flavorful little loaves that are made
entirely from rye flour and contain no wheat. Even the
cookies are made with rye flour. Other products include
cakes and pies
made using raw
sugar. The products
are available online
and Sundays at the
Avondale Estates
Farmers Market.

Family farms
are re-emerging in
Georgia as young families find that way of life healthy
and sustainable. Four Bellies Farm is just such an enterprise, the work of Avery and Melissa Nisbet, who are
rearing their two children in the farm world. (The "four
bellies" alludes not only to the four human bellies sustained by the farm but also to the structure of a cow's
stomach.) The couple raises lambs, chickens and their
eggs, and rabbits on 62

Do you avoid whiskey because of gluten? Here's a
Georgia Grown alternative that's gluten-free: TazaRay,
made from malted sunflower seeds and malted corn, is
produced at Dalton Distillery. Master Distiller Raymond
Butler has developed a delightful sipper that has a
smooth, clean flavor and finish. TazaRay is aged in bourbon barrels, while TazaRay Red is aged in red-wine barrels. Both are best enjoyed neat but also work in cocktails. Both took bronze medals at this year's Washington
