Specialty Grocer Gains
The Fresh Market blossoms along the East Coast, signaling a new era for shoppers seeking out gourmet foods.
by John Unrein Decades ago, savvy shoppers who sought out enticing new food flavors took their primary cues from the fine dining sector. Restaurants ruled the world of innovation. Flavor trends migrated from the tables of white tablecloth establishments to chain restaurants to supermarkets and finally to the dining room tables of American consumers. All that changed within the past five years with the ascent of the specialty grocer. The United States is home to 36,149 supermarkets – a total that is holding steady – but an increasing number of specialty gourmet grocers. Industry estimates put their numbers at 2,000 to 3,000. Specialty grocers such as The Fresh Market, Bristol Farms and Lunds & Byerly’s are quickly gaining reputations among foodies as the cream of the crop when it comes to food innovation. A new report prepared for the International Dairy-Deli-Bakery Association by food-research specialist Datassential surveyed more than 3,000 consumers who rated specialty
supermarkets as the most innovative format among supermarkets, restaurants and other types of food stores. Consider that 65% of consumers called specialty supermarkets “very” or “somewhat” innovative; only 42% said the same about traditional supermarkets. A specialty supermarket carries half the total of unique UPCs sold at a traditional supermarket (56,000 compared to 100,000, according to SPINS data) and relies on agility in the marketplace to gain its competitive edge. The specialty gourmet shopper is looking for the “gourmet find” and products that capture the essence of flavor and adventure, according to SPINS. They also possess a strong but secondary interest in natural quality and content of food. Nowhere is this trend more relevant than in the specialty grocer arena. And one specialty grocer stands out this year as one poised to take full advantage of changing shopper demands. The Fresh Market, a 105-store grocery store operator based in Greensboro, North Carolina, is embarking on an aggressive pursuit of market share this year.
