Dairy Products
Prices of dry milk products were
mixed last week. Cheese prices were
stronger. Butter prices were unchanged.
High-heat nonfat dry milk prices were
down 3c a lb. Low- and medium-heat
prices were off 3@4c. Although stocks
remained tight, supplies were more easily accessible after increased production
during the holiday period.
Dry buttermilk prices were lower in
the Central and East but remained firm
in the West. Supplies increased from recent heavier churning but still were considered tight. Demand remained good.
Production of dry whey increased in
some regions, but supplies fell short of
strong domestic and export demand,
which pushed prices up 2c a lb. Prices of
whey protein concentrate (34%) gained
2¼c a lb as supplies remained short of
demand. Lactose prices held firm.
Casein prices were unchanged, holding
the previous week's gains, while caseinate prices advanced on short supplies.
Cheese prices were moderately higher.
Demand was fair to good as orders were
placed to replenish stocks from holiday
sales and to build inventory for Super

Bowl features. Production was strong in
most regions but was easing as less milk
was available with schools reopening.
Butter prices were firm, with demand
fair and mostly seasonal. Cream supplies
were readily available, and excess production was moving into inventory. MBN
Egg Products
Egg and egg product prices were higher last week. Trading increased to a more
normal pace after slowing during the holidays. Shipment of shell eggs for an export sale made a few weeks ago tightened
supplies of graded eggs and breaking
stock. Quoted prices for breaking stock
were 2@3c a dozen higher, but processors
had trouble finding supply. Graded shell
eggs were up more than 10c.
Dried whole eggs, whites and blends
jumped 5c a lb higher, with yolks steady.
Liquid whole eggs and whites surged 5c
higher, with yolks up 2c. Frozen whole
eggs were 3c higher, whites and salted
yolks up 2c and sugared yolks steady. MBN
Cocoa
Cash cocoa trading remained slow last
week. Prices were unchanged. After dipping early in the week, cocoa futures in New
York rebounded on speculative buying and
a weaker U.S. dollar after the Bank of England surprisingly raised interest rates.
U.S. cocoa bean imports in November
were 52% below a year ago, the Commerce
Department said. Germany's 2006 cocoa
grind was up 30% from 2005, an industry
group said.
Swiss bulk chocolate maker Barry Callebaut said last week it would increase
its focus on business customers and reduce attention on branded products. MBN
