Dairy Products
Dry dairy product prices were mostly
lower last week. Increased supplies of milk
due to holiday school closings resulted in
increased production of many products.
High-heat nonfat dry milk (N.D.M.)
prices were unchanged with production
limited. But low-heat and medium-heat
N.D.M. prices dropped 5@7c a lb as production increased over the holiday. Demand was only fair as buyers expected
further price declines. Improved interest
in N.D.M from cheese manufacturers
was noted at the lower price levels.
Lactose prices dropped 5c a lb on lighter demand and growing inventories. Prices of 34% whey protein concentrate eased
1c a lb as lower N.D.M. prices and heavy
stocks pressured the market amid fair
demand. Dry whey prices eased 1c after
moving higher the previous five weeks.
Cash cheese prices advanced, with
cheddar blocks at the Chicago Mercantile Exchange hitting a record high early
last week. Domestic and export demand
was good. "Customers should anticipate
large price increases in hard Italian-type
varieties since international supplies and
production have been reduced," the U.S.
Department of Agriculture said. MBN

Egg Products
Tight egg supplies continued to push
breaking stock and egg product prices to
multi-year and record highs. With lighterweight retail eggs in short supply and users drawing from breaking stock, prices of
nest runs and checks gained 1c a dozen,
adding to record highs set almost weekly
in November. Some processors were offered eggs 7@10c a dozen above quoted
levels and had to pay at least 2@3c a dozen above quoted prices to get supply.
Dried egg yolks advanced 8c a lb, dried
whole eggs and blends gained 7c and
dried whites held steady. Prices of dried
whole eggs and blends were the highest on record while yolk prices were the
highest in 23 years. Demand was strong
after the holiday. Processors had little or
no inventory and rationed product in
some cases. Lead times for dried products stretched to as much as three weeks,
although processors hesitated to price
product that far ahead fearing egg prices
would escalate further. Some priced dried
products well above quoted prices and
still sold all they could produce.
Frozen whole eggs and whites were
1c a lb higher, sugared yolks were up 3c
and salted yolks were unchanged. Liquid whole egg gained 1c, yolks gained 4c

Cocoa
Cocoa powder prices held steady last
week as trading remained slow after the
Thanksgiving holiday. Another round of
buying was expected in mid-December before slowing during the Christmas break.
Ivory Coast main crop cocoa bean
deliveries in late November were 48%
ahead of a year ago, when shipments
