Responding to heightened interest in artisan-style breads, Caravan
Ingredients launches four new items
under its World Bread line. Dinklebrot Mix makes dark, heavy,
European whole-grain bread using dinkle, an ancient grain in the
spelt family. Kraftkorn H&H, a
half-and-half base, produces light
grain bread with a flavor profile
combining banana, apple and buttermilk. Waldkorn H&H is another
half-and-half base that yields light
grain bread. And Pane Luciane Base
makes Italian-style white bread with
Old World flavor and desirable large
open holes. The breads are inspired
by the travels of the company's
global bakery consultant, Werner
Simon. Formulations from Europe
were vetted in the US by a panel of
bakers, resulting in these four initial
