Dairy Products
Select dry dairy product prices were
sharply higher last week. Butter prices
eased. Cheese prices were mixed.
Dry buttermilk prices jumped 8c a lb,
with most of the strength in the Central
region. Production in that region eased
slightly, but domestic and export demand
remained strong, especially as buyers
sought dry buttermilk as a substitute for
nonfat dry milk (N.D.M.). Inventories
were tight in all regions. The situation
was much the same for 34% whey protein
concentrate, which saw price gains of 7c a
lb. Supplies were tight. Domestic demand
and export demand were strong.
Dry whey prices gained 3c a lb, with
some product offered at a premium to
the quoted price range. But growing resistance to prices was noted.
High heat N.D.M. prices advanced 1c a
lb as supplies tightened and some orders
were late to be filled. Production was steady
to lighter. Prices of low-heat and mediumheat N.D.M. were steady to firm. Demand
remained strong for the limited offers. Delayed deliveries of contracted low-heat and
medium-heat product also were noted.
Lactose prices were steady to firmer as
supplies remained short of demand.
Cheese prices were mixed. Cheddar
barrel prices moved higher. American and
mozzarella prices declined. Cheese production was strong. Demand was good.
Butter prices declined. Production
again increased. Inventories continued
to build. Initial orders for Passover and
Easter were lighter than expected. MBN

Dried egg product prices were mixed
last week. Frozen and liquid product

prices were steady to stronger. Breaking egg prices were unchanged but were
firming as supplies tightened and graded egg prices advanced.
Dried whole eggs and yolks were 5c a lb
lower, whites 5c a lb higher and blends unchanged. Trading slowed from a week earlier as buyers showed resistance to recent
price gains. Offers were adequate to light.
Frozen yolks were 1@2c a lb higher.
Whole eggs and whites prices were
steady. Liquid whites and yolks gained
1c, with whole eggs unchanged. Demand for frozen products was moderate
to good. Supplies were limited.
Year-to-date production of dried eggs
was down 24% from a year ago, the U.S.
Department of Agriculture said. MBN
Cocoa
Cash cocoa powder prices were unchanged last week. Trading was slow.
New York cocoa futures prices moved
lower on profit-taking after sizable
gains in recent weeks. Fortis projected
a 215,000-tonne global cocoa deficit for
2006-07, up from its earlier projection of
131,000 tonnes, due to reduced purchases in the Ivory Coast and Ghana. MBN
