What happens when a pizza maker has a friend at a
restaurant specializing in French cuisine? A little crosspollination, of course, which begins to explain how
Lars Smith developed the Duck Duck Cherry recipe
that won him first place in this year's Non-Traditional
Division at Pizza Expo.
The 33-year-old Californian says his winning pizza
was "very much inspired" by the duck and cherry
pairing he enjoyed in dishes at a friend's Palo Alto
restaurant. "I went wild from there," he says. "You
can't win the Non-Traditional Division without wowing
people, right?"
Smith received his training at Pizza My Heart under
Leah Scurto (a former Pizza Challenge region winner)
and Tim Silva (the 2015 Pizza Maker of the Year). He
is now one of the owners of the soon-to-open State of
Mind Public House & Pizzeria in Los Altos. The craft
beer- and pizza-centric place will feature communal
seating and take orders at the bar.
Starting with what he calls a "neo-New York
crust" with duck fat added to it, Smith incorporated
mozzarella, Point Reyes toma, a sour cherry relish
(made with an IPA vinegar) and both roasted and
smoked duck. Then after the bake he topped the pie
with frisée dressed in smoked olive oil, pickled fresh
cherries, Pecorino Romano, a mustard caviar and fresh
herbs. Wow!
Experience in two other Pizza Challenges during
previous years convinced him to concentrate first on
his dough. "I really geeked out on the crust," he says.
"If the crust isn't right, it doesn't matter what you put
on top of it." A sign proclaiming State of Mind as the
home of a 2017 world champion pizza was already up
on the location during build-out. And the duck-cherry
pizza was scheduled be on the opening menu.
Meanwhile, the new owners are already talking about
closing their bar and restaurant for the week in March
2018 to bring the staff to Pizza Expo for the Challenge.
"I will be there competing in the Traditional Division, or
maybe Gluten-Free," Smith says.
