Tribeca Oven, Carlstadt, NJ, a manufacturer of parbaked and frozen artisan-style bread, combines the
elegance of rustic artisan bread with Mediterranean
inclusions of dried fruits, nuts, seeds and olives. The
company's Fruit and Nut loaf is made with dried apricots, cranberries, sour cherries, pitted dates, orange rind,
roasted pistachios and hazelnuts. The Italian-inspired
Pane De Sesamo loaf uses sesame seeds, which are a
staple of breads in Sicily. To produce its Rustic Olive
bread, Tribeca Ovens teamed with Food Match, Inc.,
New York, NY, a producer, importer and distributor of
authentic Mediterranean foods. Combining traditional
artisan methods, modern technology and brine-cured
green Mount Athos, black Kalamata and blond Mount
Pelion olives, Tribeca Oven combines the flavors of the
Old World with par-baked and frozen convenience.
Food Match is also working with the in-store bakeries
of mainstream grocers to create value-added breads with
roasted peppers or olives. "The Mediterranean items are
selling well," said Kevin O'Connor, senior vice-president
of sales, Food Match, Inc. "High-quality ingredients in a
minimal amount can go a long way, and these products
can fit into many price points and be presented as a gourmet product or a new flavor profile."
