CLEAN
NUTRITION
REPORT
Saturated fats and trans fats, such as in fries, pastries
and fatty meats, should be avoided, as they are more
easily incorporated into fat cell storage. Even though
short- and medium-chain saturated fats (such as in
coconut milk) can be nutritionally beneficial, the
nutrition plan contained here is designed to get its followers
extremely lean and lose fat quickly.
For example, nuts are nutritious; but in a fat-loss
diet, they exemplify the one caveat with consumption of

Grant Roberts

any type of fat: Fat is very calorically-dense, and even
small amounts can lead to a large caloric intake.
Dedication, preparation, consistency
and will-power
A higher protein/lower carb/moderate fat diet earns a
general recommendation for fat loss. This type of diet,
however, may not be compatible with your lifestyle.
Protein is not very mobile, convenient or neat. Lean

Kalamata
olives for
health and
well-being
__________
There are hundreds of
varieties of olive trees
in the world, each
bearing its unique kind
of fruit. In the U.S., the
main varieties (mission,
Servillano, Manzanillo,
Ascolano and Barouni)
come from California
and are lye-cured,
meaning they undergo
a ripening process that
exposes them to
oxygen by soaking in
an alkali solution.
This process lessens
their antioxidant load.
Curing with water or
brine is a better way to
preserve the olive's
amazing health
benefits, and Kalamata
olives are the sole
variety which are
granted "protected
geographical status"
and "protected
designation of origin"
recognition.
When eating olives for
their array of health
benefits, look for true
Kalamata olives, not
Kalamata-style or
Kalamata-type olives.

you've been taught about dietary
fat out the door, according to
fitness expert Grant Roberts.
Roberts, who trained Hilary Swank
for the role in "Million Dollar
Baby," is noted as one of
Hollywood's most successful
trainers/nutritionists and lifestyle
coaches.
Roberts examined a headline
media article on the recent change
in attitude about dietary fat and
points to the great irony now
occurring. Many who once
declared dietary fat as the enemy
are now changing their tune. That's
especially true for foods that
naturally contain fat, such as
avocadoes and eggs.
Roberts notes, "Eggs were
singled out because they are high
in cholesterol. The finger of blame
can be pointed at one person:
Ancel Keys. Keys [a researcher]
convinced anyone who would
listen that heart disease and obesity
was a result of dietary fat and
cholesterol."
Unfortunately, Keys was able to
persuade a variety of influential
players who bought into his
theories.
Bogus claims
Roberts names some of those
involved, including the American
Heart Association, which fell for
his bogus claim on fat; Roberts
says, "...and influenced the USDA.
Keys is also responsible for the
world using the body mass index
(BMI) to measure obesity, when it
doesn't. Keys hypothesized that
cholesterol in your diet caused a
rise in cholesterol; it doesn't."
Roberts points out that the
opposite of Keys' conclusions are
true. For example, "Eggs are
practically a perfect food - eggs

and saturated fat were wrongly
accused. We have consumed a diet
high in fat and cholesterol for
(eons) and suddenly now it's
killing us?"
Roberts also emphasizes that
Americans eat incredible amounts of
low fat and processed, high carb
foods - a recommendation by the
USDA since 1980. Since 1980,
however, Americans have been
getting exponentially fatter, as
evidenced by the obesity map on the
Centers for Disease Control website.
Manufacturers continue to tout
the benefits of the low fat
approach, and even the natural and
organic industries have been
tripped up in this arena. The
medical community has jumped
onto this path as well.
Roberts explains, "Inexplicably,
nutrition is not a focus of the

medical curriculum. Despite the
fact that Hippocrates said, 'Let food
be thy medicine and medicine be
thy food,' the medical community
and dieticians are spoon fed the
USDA guidelines as part of the
curriculum and instructed to
adhere to the advice."
That adherence to the USDA
guidelines has caused more harm
than good because it is based on a
faulty foundation.
Roberts reveals that "The USDA
guidelines are heavily biased and
influenced by the food industry.
The money generated by the USDA
food guidelines is astronomical
since all government institutions
(schools, prisons), hospitals and
food subsidy programs must
provide meals in accordance with
the low fat, high grain advice."
Roberts comes down hard on
labeling, particularly in the area of
trans fats: "Current label laws are
horrific and confusing. Recently
the FDA stated manmade trans fats
do not pass (the guidelines) as safe
to consume and has voted to ban
manmade trans fat, but instead of
demanding products be pulled off
shelves, it is allowing food
manufacturers time to revise
ingredient lists and continue to sell
what they admit is deadly."
Healthy ingredient
structure
Maybe simplicity is the answer.
"Foundationally the same six foods
we consume are the same six
ingredients we are made of," says
Roberts. "If a healthy human came
with an ingredient label it would
state in descending order: water,
protein, fat, minerals, carbohydrates,
vitamins."
Sounds like fat in our diet was
never the problem. Maybe we
should focus more on proteins and
healthful fats and less on
carbohydrates.
